I like to bake. I used to make a mean granola, wonderful bagels and excellent whole wheat bread. I have taken up baking again, but now need to modify my cooking for our health needs. Lisa avoids gluten (wheat products) and I follow a low carbohydrate diet.
Lisa recently found a web site that got me back baking. It is Elana’s Pantry. It features gluten-free recipes, using low glycemic index sweeteners such as agave syrup. It introduced us to almond flour. Just like it sounds, it is almonds ground to a flour-like fineness. It is low in carbohydrates, high in protein and has a slightly nutty flavor. It is wonderful to bake with, and doesn’t have all the scary ingredients found in many gluten-free flours. In San Diego you can find almond flour at Trader Joe’s, Windmill Farms and other grocery stores.

I tried the molasses cookies this morning, and they are great! Since the oven was already warmed up, I also made my favorite- chocolate biscotti.
